A simple, natural cuisine took hold in the islands close to Venice that offers many ways to cook fish: from fantastic starters such as cuttlefish 'in saor', marinated in vinegar, raisins and pine nuts, to goby fish risotto, or 'risotto go' in the Venetian dialect, a fish that is commonly found in the lagoon.
